Greek Quinoa Salad
They say that variety is the spice of life. Right? For starters, who are “they” and what do “they” know about me and my life?! “They” seem to say a lot of things, some of which I may agree with, most of which I don’t. Who put them in charge? Who made them my boss? I have a boss already…don’t need another one. Thank you very much. Maybe I like eating the same thing all day every day. Maybe I want to be boring and just have the exact same sandwich for lunch every day! Ask someone who “they” are and you’ll probably hear: “You know, the people that write books and stuff.” Really? Eh no…
Luckily for you, I very much so enjoy variety. It’s my favorite spice! And it’s that constant repetition of eating the same thing everyday for lunch that inspired me to make this recipe. I’ve used quinoa once before in my recipe for Quinoa Khichdi and I loved the health benefits of using it instead of rice. Maybe “they” are some secret society like the Freemasons? Okay I think I’ve been reading too many Dan Brown books… What were we talking about? Oh yea, quinoa. Yea, quinoa. If you have eaten quinoa before you know that it can be rather bland when you don’t have good flavors to go along with it. Plus I’m on a quest to lose weight so this seemed like the perfect time to whip up some super healthy quinoa.
Hence the birth of: Greek Quinoa Salad. I can assure you it tastes delicious! Come on now, it’s me…Would I ever give you food that didn’t taste good? Tangy bites from the olives and salty bites from the feta, paired with the earthiness of garbanzo beans come together to give you a feel good about yourself kinda lunch. It’s light, refreshing, and it’ll keep you full. That’s one of the things I love about quinoa: It keeps you feeling full. I still want to know who “they” are…
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Here’s what you’ll need:
- 1 ½ Quinoa
- 3 Cups, Vegetable Broth
- 1 ½ Tsp Salt
- Juice of 1 Lemon
- Zest of 1 Lemon
- 2 Cups Red Onions, diced
- 3 Cups Tomatoes, seeded & diced
- 3 Cups Cucumbers, diced
- 1 ½ Cups Kalamata Olives, pitted & halved
- 1 ½ Cups Garlic & Herb Feta
Step 1: Start by washing the quinoa under cold water to wash away the bitter coating.
Step 2: Meanwhile bring the broth to a boil and add in the quinoa along with 1/2 tsp of salt. Cook for 15 minutes until the quinoa has absorbed all of the broth.
Step 3: Allow the quinoa to cool and then fluff with a fork.
Step 4: Add in the remaining ingredients and mix until everything is evenly incorporated. And it’s ready to serve!
Pour yourself a cool drink and grab a plate of this delicious quinoa and you’ve got a lunch all your coworkers will be begging for!
